A Healthier Version of Fabulous Fried Green Tomatoes
September 13th, 2011Good KitchenMy favourite film of all time is Fried Green Tomatoes, and as it happens fried green tomatoes are one of my fave appetisers too. I happened upon a new recipe that eliminates one of main parts of these tasty treats, the fried part, and replaces it with a much more health conscious approach. Another interesting twist I should mention is that they are battered in polenta, something I do not use all that often, but do like. I made them last weekend and can only make a glowing report.
The ingredients are as follows:
- one large egg beaten
- salt and pepper
- about 2 tablespoon all purpose flour
- 2 tablespoon polenta
- 2 medium green tomatoes
- 1/4 cup milk
The preparation:
- beat egg and milk together
- mix the flour with polenta and add salt and pepper
- dip sliced green tomato in egg and milk then in polenta and flour
- use an indoor grill double sided and grill for 8-10 minutes
