Secretly Getting More Vegetables Into Family Meals
December 5th, 2011Good LifeIn our house, we are trying to get more veggies into our daily diet. Most recently I have been on a quest to get the whole family to enjoy cauliflower. It has always been a winer in my book, but not everyone at our dinner table has agreed to it being put on their plate in the past. So, here is what I came up with to entice the troops to not only take a “ no thank you” token helping, but to actually ingest the veg.
The top four recipes that I came across were roasted cauliflower salad, cauliflower with walnuts and grated carrot salad, cauliflower bacon and olive tortellini, and cauliflower puree. Right about now you are probably wondering if I have actually made all four of these yet, and the answer is blatantly no. In fact, during the time I spent looking up these recipes, the cauliflower has started to look a little peeked.
As such, tonight we will be cooking up the puree. This seems like the correct choice amongst the bunch as it will be virtually unidentifiable for starters. I will try to get them to try it without being told what it is made of. Oh , and that is just steamed cauliflower florets that have been pureed with some butter. The only addition is salt and pepper to taste. So, as you can see the second bonus is the easy in which it is made. Wish me luck!
